What Goes Around Comes Around

Two articles from years back popped up about Collards and the 'good for you, yes yum' POTLIKKER while thinking about how to share our passion for reuse, recycle, biodegrade. I almost switched to yapping about the beautiful green liquid and its top dog star, the collard, when it became clear that there was a true correlation between the two.

When we cook up 'a mess of greens' (Angie Mosier, Southern Foodways Alliance from Ryan Stiner's article), the broth left when the greens are drained and served becomes the base for yet another delicious, nutritious staple originally of slave cooks, potlikker. Potlikker is known to nourish in a multitude of ways, according to Sheri Castle in her Our State article.

This is where linking up what we use in terms of packaging (or no packaging) with the intention of these materials having additional purpose comes into play - be it nourishing garden and farm soils through composting or becoming an essential element of an innovative material that becomes a useful item such as REPREVE, a fabric which is made from 100% post-consumer recycled plastic bottles then used by companies like ChicoBag to make usable, long lasting bags such as the Cobblestone sling bag.

What goes around, comes around is the natural cycle of our producers growing, raising or making their products in sustainable ways and using biodegradable/compostable packaging. At Cobblestone, this includes all coffee, tea and kombucha cups, microgreen and select bakery clamshells, many of the greens bags as well as recycled bottles and the unbleached paper bags for produce, bakery, and floral. There are some new initiatives in the works (check in with our resident tea vendor to learn about their latest campaign for zero waste packaging!). Biodegradable packaging materials are 100% compostable industrially, turned into nutrient rich compost, and returned to soil at work, farms and gardens everywhere!

So, there you have it - what goes around comes around, yummy and useful, what a cycle!

The Good Stuff

Creamy Turnip, Kale, and Sausage Soup
Parsnips (about 8)
1 Bunch of Kale
1 lb. Sausage (Optional)
5 Cloves of Garlic
1 tbsp fresh/dried rosemary
2 tbsp maple syrup
2 Onions
32 oz. stock of your choice

  • Pre heat the oven to 350F.

  • Wash the parsnips well and then cut into 2cm chunks. Peel the garlic and place in a roasting tin with the parsnips. Drizzle some vegetable oil, rosemary, maple syrup, salt and pepper on them and place in the oven. They will take about 20-30 mins.

  • Cook sausage on stove until brown, then drain grease.

  • Thinly slice the onions and place in a saucepan with some oil on a low heat. Leave them to cook for about 15-20 minutes, stirring occasionally. They will slowly start to soften and caramelize.

  • In a heavy bottom pan, place the roasted garlic, parsnips, caramelized onions and stock. Use a hand held blender to blend until smooth. Alternatively, do this in a a blender. Add extra water accordingly, if you want a thinner consistency.

  • Put back in a deep pot on the stove and shred in kale and add sausage to cook down for 10 minutes.

  • Garnish with cheese or toasted seeds and enjoy!

The Cooler the Weather, the Sweeter the Greens, or Roots
Not everyone realizes that certain vegetables actually taste much better when they’re grown in the winter.

Winter sweetening is a phenomenon you often see in vegetables that grow naturally in cold weather. While the first frost of fall will kill lots of plants, there are many varieties, root crops in particular, that will survive these much colder temperatures. This is due, in part, to their ability to convert starch into sugar. Over the course of the growing season, these vegetables store up energy in the form of starches. When temperatures start to drop, they convert these starches into sugars, which act as an anti-freezing agent for their cells. This change doesn’t happen overnight, but as long as you pick your root vegetables sometime after the first frost of autumn, chances are good that they’ll taste a lot sweeter than if you’d picked them in the summer.
