Holiday Fun with fresh Baby Ginger..

Can't you smell that fresh ginger now? Let' s make a batch!

Chewy Ginger Cookies

Makes about 30 cookies
3 cups plus 2 Tbs all-purpose flour
2 Tbs unsweetened cocoa powder
2 1/2 tsp ground ginger (Plum Granny Farm’s, of course!)
2 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp ground nutmeg
1 cup (2 sticks) unsalted butter, softened
1 cup packed dark brown sugar
2 Tbs finely grated ginger (I use about 2 1/2 Tbs)
1/2 cup unsulphured molasses
2 tsp baking soda, dissolved in 1 Tbs boiling water
1/3 cup granulated sugar

Sift flour, cocoa powder, and spices in medium bowl. Set aside. Put butter, brown sugar, and grated ginger into mixing bowl. Whisk until fluffy. Beat in molasses. Beat in flour mixture in two batches, alternating with baking soda mixture. Shape dough into disk. Wrap in plastic. Refrigerate until firm, about 2 hours (up to overnight). Preheat oven to 325F. Shape dough into 1/2 inch balls and place on large plate or tray. Refrigerate for 20 minutes. Roll balls in granulated sugar. Place on a cookie sheet lined with parchment paper.  Bake until surfaces crack slightly, 10-12 minutes. Let cool on sheets 5 minutes. Transfer to wire rack to cool completely. Cookies store well in airtight container for up to 3-4 days (they won't last that long).
