Hailing from Provence, that little yummy region in the south of France near the Mediterranean Sea, ratatouille is a bright and chunky summer vegetable stew, rich with olive oil and fragrant with garlic and herbs. So - south of France, south of Virginia - no matter where, the ingredients of this versatile dish are in abundance at Cobblestone! Add some okra to this lush mix and freeze some for a chilly day in the fall with a roasted pork tender or brats - maybe they sit side by side in your freezer as a reminder!
Leave it to our producers to let us know that it is National Potato Day this Monday the 19th! Did you know that more than 45 billion pounds of potatoes are harvested in the U.S. each year? We use them to make baked potatoes, mashed potatoes, home fries, French fries—the list is endless! The wide variety of North Carolina potatoes (excluding sweet 'taters which are on a different growth and storing cycle) are primarily dug in June and July, when air and soil temperatures are high. All are sold over a six- to eight-week period in the summer, most being destined for markets.
Storage tip: Potatoes keep best when placed in a well-ventilated container and stored in a dry location, away from sunlight, and at temperatures between 45 and 55 degrees F. That isn’t too easy to find in most homes today but if you place them in a paper bag, cardboard box, or bowl (not in a plastic bag) and keep them in the coolest part of the kitchen or a dry part of your basement, it should help their longevity.
