With summer’s end fast approaching - only 28 more days! - it's time to savor the season and take a much needed break from the heat of the kitchen. Right now, it's about celebrating simplicity and peak-season produce, basking in the last of the summer sun and enjoying the remaining long summer evenings with family and friends.

The key is to store potatoes in a cool dry place, like the cabinet of a pantry, a paper bag or cardboard box. It’s important to keep potatoes at the cool, ideal temperature (but not, surprisingly, the fridge) to prevent them from turning green, getting soft spots or pre-maturely sprouting. Once this happens, it’s a sign that they’re past their peak.
