With continued good weather, albeit dry, we still have time get transplants and perennials in the garden plus SAVE some SEEDS from your favorite maters, squash, beans and more. Saving seeds is so simple to do and with the varieties of produce and herbs at the market, you are harvesting top notch heirloom seeds!

To save a seed, remove/spit them from the veggie or fruit, rinse, lay on a paper towel to dry and simply let it dry, roll up and store (mark the name on the packet) in a cool dry spot until late winter/spring when time to plant. Vendors will have even more intel to share so enjoy getting the seed saving scoop from the experts. An early start will just make the winter seed catalogues even more delightfully obsessive!

MARKET FINDS

STUFFED ACORN SQUASH
This recipe is not only hearty and satisfying, but healthy too. You probably know, but acorn squash is loaded with vitamin C, which is a great vitamin to help to boost your mood during the colder weather seasons.

FOR THE ACORN SQUASH

  • 2 Acorn Squashes — cut half with seeds scooped out

  • 1 Tablespoon Olive Oil

  • 1 Teaspoon Paprika

  • Salt and pepper to taste

FOR SAUSAGE AND KALE STUFFING

  • 1 Tablespoon Olive Oil

  • 1 Pound Spicy Italian sausage (optional)

  • 1/2 Large Onion — diced

  • 2 Cloves Garlic — minced

  • 2 Sweet Peppers — diced

  • 2 Cups Mushroom of choice (or more for vegetarian) — shredded

  • 1/2 Bunch of Kale — center rib removed and torn into pieces (about 3 cups prepared)

  • 1/2 Cup of Diced Tomatoes

  • Kosher salt and black pepper to taste

You can stuff the acorn squash with a number of things. If sausage is not your thing, you can replace it for chicken, mushrooms, tofu or any other type of protein you prefer. Or you can also make a vegetarian version of this dish by replacing sausage for rice or quinoa. This sausage and kale stuffing can really be used to fill any type of winter squash and goes really well with butternut squash or sweet potato too.

INSTRUCTIONS

  • Preheat oven to 370 degrees F.

  • Bake the squash in the oven for about 50 to 60 minutes.

  • While the acorn squash is in the oven, prepare the filling by cooking the sausage and then sauté onions, garlic, mushroom, kale and tomato sauce in the skillet. Add sauage after cooking and draining grease.

  • Then, when the acorn squash is baked, remove from the oven and stuff the baked squash with the filling you just prepared. You can break up squash before adding filling for easy eating!

  • Divide kale-sausage filling among squash.

  • Top with cheese if you desire before serving.

  • Enjoy!
